Creamy Red Pesto Dip

I love a good party or get together. I'm especially fond of a theme! This past week I went to a paint party hosted by my book club and we all made book related signs. Being me with my love of hats and magnetic glasses toppers you know I had to have a little fun with this outing. Rainbow Paint Splatter for everything! I hung my new sign on the side of my book shelf. What do you think???

These are all the signs we made the other night. I can't seem to pick a favorite. I love how they all turned out differently.

We also all brought snacks to our paint night. I arrived to find mimosas, cake, pretzels, cheese dip, fruit and all manner of goodies. My contribution was a tray of veggies and crackers with the Creamy Pesto Dip I'm about to share with you. I asked all the ladies to give me feedback and if I should change anything and was given a resounding no.


It is only 4 ingredients but a couple of them might be new to you.


Nutritional Yeast is an inactivated yeast. It won't make your bread rise if you tried baking with it. It contains proteins, vitamins and antioxidants. It is often used in vegan cooking for a nutty cheesy flavor over pasta or popcorn as many of us might use parmesan cheese. It can also be used as a thickener in soups and smoothies or for a touch of umami in dishes that need just that extra little something.


Heart of Palm is a vegetable that comes from the inner core of certain types of palm trees. Some examples of palm trees where your heart of palm may come from are coconut, acai, palmetto and peach palm. It can be added to salads, main dishes or almost anything else you can think of. The flavor is similar to artichoke hearts and it is loaded is healthy minerals and antioxidants as well.


Only 4 ingredients and a small blender needed for something really tasty. A serving is only 23 calories so feel free to eat the whole batch for only 275 calories and zero guilt.


Ingredients:

•14 oz. can Heart of Palm, drained

•¼ cup Rosso Pesto Sauce

•1 tbsp. Nutritional Yeast

•2 tbsp. Unsweetened Original Almond Milk

Directions:

•Add all ingredients to blender

•Blend until smooth

•Chill and serve with vegetables and crackers

That's it! No real work involved. Tasty and not the ranch or dill dip you see at most parties.
